Winemaking
Villa Narcisa is planted with bush-trained vines. This method effectively keeps grapes near the ground, allowing them to ripen at night due to the heat retention retention of the soil and protecting protecting them from the excess of heat and sunlight during the day. These vines are resistant to weather and disease but are labor intensive to harvest. It is cold maceration for a few hours. Then the juice is then settled for one day. Once clear, fermentation takes places in new French oak barrels where it ages for six months with regular stirring (batonage), followed by another half a year in bottle before release.
Tasting Notes
Bright and golden in the glass. Showing ripe peach and grape aromas, coupled with toast, nuts and vanilla characters. It is a full-bodied, smooth wine, displaying a pleasant acidity and lingering nutty flavors.
Food Pairing
We recommend to serve it chilled (42ºF). It will show its best character when we combine it with food: It will match the flavors of firm-fleshed grilled fish, such as monkfish, seabass or turbot and grilled vegetables. Try with fish rice casseroles, savory pastries, like empanadas or quiche, grilled or pan-roasted chicken.
