Origin
The variety Verdejo Marcorta was almost extinguished but, after years of research, Javier Sanz has managed to bring it back to use in order to craft this unique wine. It is an extremely unusual clone of Verdejo which was no longer used due to the difficulty of its harvesting (which explains the name “Mal-corta” : Bad/difficult to cut). They have recovered the variety driven by the peculiar intensity of its aromas and flavors.
Winemaking
It is quite a late-ripening variety actually the last one to be harvested. It also grows in small and tight bunches, which makes it ripen with a higher acidity, producing refreshingly balanced and concentrated wines.
Tasting Notes
Clean and bright. It shows a pale straw yellow color. Intense, clean and powerful aromas of blossom flowers, citrus and creamy stone fruit. Its flinty, mineral aromas provide an added complexity in the nose. Tangy acidity, crisp and refreshing. Its citrus and fruit flavors linger in the palate, leaving a nice and fresh aftertaste.
Food Pairing
We recommend to serve it chilled (42ºF). We recommend to match it with grilled and smoked fish. Fish casseroles and cold soups.
